Aligote is commonly known as the “second white wine grape” of Burgundy (after Chardonnay), but is also cultivated in Eastern Europe and Washington State in the USA. Aligote wines tend to be pale yellow in colour with a tart, mineral flavour. This varietal adds acidity and structure when blended (with Chardonnay for example). Aligote is also one of the varietals used in the blend of Burgundy’s sparkling wine, Cremant de Bourgogne.
