The structure and aromatic richness of a fine red wine from Champagne

The estate

Nicknamed “Boll” by those from Champagne and “Bolly” by the English, the timeless and legendary Bollinger Champagne House forms part of a small circle of three great Champagne houses. Bollinger champagne’s style is defined through its remarkable precision, which is brought to every moment of production. With a respect for tradition, riddling done by hand, natural corks for magnum reserve bottles and the last permanent cooper in the region, excellence has symbolised Bollinger champagne culture since its creation in Aÿ. More than just an art, it is a heritage.

The vineyard

The Bollinger Champagne House stands out for its 174 hectares spread out through seven main vineyards, 85% of which are Grand and Premier Crus, allowing the house to be one of the few which produces its own grapes for its blends. The house’s signature grape variety, Pinot Noir, represents 60% of the vineyard’s total grape varieties.

The wine

Among the most prestigious Champagne houses, Bollinger successfully stands out due its very high-end vintage champagnes and produces exceptional Grand Crus still red wines from the Côteaux Champenois appellation, stemming from the mythical parcel of Aÿ: La Côte aux Enfants.

This 4-hectare parcel was once divided between fifty or so owners and was meticulously assembled by Joseph Bollinger in the early 19th century. Nicknamed the "Romanée-Conti of the Champagne region", the vineyard, which has been worked using organic practices since 2009, produces a very great Pinot Noir grapes, which makes up this secret wine, produced only in the best vintages.

Winemaking and ageing

Bollinger's Côte aux Enfants 2014 was vinified in the Burgundy style and then aged in small oak barrels.
