The estate
Established in 1850 in the cradle of the Chablis vineyard, Domaine Laroche currently cultivates 90 hectares in this prestigious Burgundy appellation. A member of the Advini group since 2016 and led by Antoine Leccia and Jean-Baptiste Mouton, the estate enjoys international recognition for the excellence of its cuvées, particularly prized in fine dining. The vineyard
The Mont de Milieu climat takes its name from the hill that once marked the border between Burgundy and Champagne. This Chablis Premier Cru terroir rests on Kimmeridgian limestone soils, characteristic of the appellation, which give the wine its distinctive minerality. The grapes come from partner winegrowers who collaborate throughout the year with Domaine Laroche.
The vintage
The 2023 vintage reveals itself to be generous and of high quality despite climatic and sanitary pressures at the beginning of the season. The heat at the end of August favored the ripening of the grapes. A meticulous harvest plot by plot, which began on September 7 with the Premier Cru Côte de Léchet and ended on September 21 with the Chablis, allowed for the preservation of freshness and minerality. The aromatic profiles are rich and balanced, while fermentations took place optimally. The potential of this vintage proves comparable to that of 2020, with yields returning to satisfactory historical averages.
Winemaking and ageing
The alcoholic fermentation of the Chablis 1er cru "Mont de Milieu" 2023 takes place for approximately 21 days at 16°C in stainless steel vats. Malolactic fermentation is fully carried out. The wine is then aged for 9 months in the historic cellars of the Obédiencerie, combining barrels of different sizes (228 L, 400 L, 600 L) and stainless steel vats. The wines rest on fine lees for several months, thus developing their aromatic complexity.
