Going against the grain of industrial methods, Don Julio adopts an artisanal approach centered on quality: explore these exceptional tequilas.
Distillery Location
The Don Julio distillery is located in Atotonilco el Alto, in the highlands of Jalisco, Mexico, at nearly 2,000 meters altitude. This region, called "Los Altos," is renowned for its exceptional blue agave growing conditions thanks to its high elevation, rich volcanic soils, and contrasting climate.
Don Julio González, a pioneer of premium tequila
A legendary man, an exceptional tequila. The story of Maison Don Julio begins in Mexico in 1942, in the highlands of Jalisco, when Don Julio González founded his distillery named "La Primavera." He then revolutionized tequila by creating one of the first premium versions, crafted exclusively from blue Weber agave grown on mineral-rich soils.
An exceptional terroir in the heart of Mexico
Located at 1,500 meters altitude, the highlands of Jalisco are the birthplace of Don Julio tequila. It is in this extreme climate, marked by hot days, cool nights, and rich clay soil, that the distillery was born. This microclimate is ideal for blue agave cultivation, although the altitude makes agriculture and harvesting particularly demanding. Aware of these challenges, Don Julio González chose to establish himself in the highlands and face these conditions to create an exceptional tequila.
Between demanding standards and excellence: a unique savoir-faire
A pioneer in his field, Don Julio González was the first to hand-select and harvest each blue agave plant, thus ensuring optimal maturation between 7 and 10 years. Driven by this demanding approach, Don Julio tequila is crafted according to a rigorous process: slow cooking of piñas in traditional brick ovens, double distillation in small batches, then prolonged aging in bourbon barrels.
This rigorous craftsmanship, combined with precise aging and an iconic bottle, gives Don Julio tequilas a rare elegance. Few Houses master each step with such demanding standards, from planting to bottling.
