The estate

Family-owned since 1794, Domaine Pignier is located in the Côtes du Jura in Montaigu. Marie-Florence, Antoine, and Jean-Étienne—the seventh generation—have jointly run the estate since 1991. Demeter-certified since 2003, the vineyard is farmed biodynamically. The estate stands out for its 13th-century Cellier des Chartreux, as well as its status as the village’s only winegrower.

The vineyard

This Savagnin comes from the Reculée du Val de Vallière in the Côtes du Jura. The vines thrive on blue and black clay marls from the Lias, layered with shale. The estate practices Demeter-certified biodynamic farming.

The vintage

The 2019 vintage in the Jura was marked by a warm, dry winter, followed by a late frost on May 6. The summer was hot, with a few hail events. Despite these climatic uncertainties, the harvest carried out on September 18, 2019 made it possible to bring in grapes of remarkable quality.

Winemaking and aging

The harvest is carried out exclusively by hand, with sorting directly in the vineyard. The grapes are transported in small crates to preserve their integrity. The vinification of Savagnin 2019 is conducted with indigenous yeasts. The grapes are pressed slowly to retain the fine lees. The wine is then aged for 60 months in oak barrels using the non-topped-up method under flor, allowing the development of oxidative aromas typically reminiscent of walnut and hazelnut. The estate’s cool cellars provide favorable conditions for this long aging period. Bottling takes place after a light filtration on a “Racine” day according to the lunar calendar, with a natural cork closure.
