In the mouth, this sake reveals a combination of fruity and floral notes, with an iodized finish and subtly spiced (white pepper).
An exceptional sake, between tradition and innovation
The property
The IWA sake is a French-inspired initiative. In 2018, Richard Geoffroy, former cellar master of Maison Dom Pérignon, takes on a new challenge: to create his own exceptional Japanese sake. Passionate about Japan since 1991, he is convinced that the future of sake goes beyond the borders of the archipelago and aspires to give it an international dimension.
Origins and production method
Coming from the terroir of Tateyama, in the heart of Toyama prefecture, this exceptional sake is made from three varieties of rice and five strains of yeast. After a meticulous three-week blending process, it rests in the bottle for a year before being marketed. This Junmai Daiginjo, displaying a polishing rate of 35%, reveals a rich and structured profile, enhanced by perfect balance and an alcohol content of 15%.
This is one of the few sakes with aging potential.
