Tasting
Appearance
This wine unveils a lovely, moderate lemon-yellow hue, reflecting its youth while offering a beautiful brightness.
Nose
The bouquet proves particularly elegant and expressive. It releases superb aromas of white flowers, such as rose and lily, accompanied by notes of ripe white fruits like apple. A marly minerality, subtle aromatic herbs and a light warming sensation round out this delicate profile.
Palate
The attack is ample, generous and harmonious. The silky texture is perfectly balanced by a crystalline vivacity. The finish, of beautiful length, stands out for its strong minerality, offering saline, iodised and smoky touches reminiscent of flint and pencil lead.
Food and wine pairings
This great white wine pairs wonderfully with noble fish such as turbot or line-caught sea bass, ideally prepared with citrus fruits. It also enhances fine crustaceans such as lobster or crayfish. On the meat side, it goes perfectly with poultry, roasted white meats or those in sauce, as well as delicately truffled dishes and characterful cheeses.
Serving and cellaring
It is recommended to serve the Chablis Grand Cru "Les Blanchots" Dom. Long-Depaquit 2023 at a temperature between 12 and 14°C. While it can be enjoyed in its youth, it has excellent ageing potential and can be kept in the cellar until around 2034.

The estate
Founded in 1831 by Bernard Bichot, the négociant house Albert Bichot is a true institution in Burgundy. Now led by Albéric Bichot, who represents the sixth generation of the owning family, this prestigious brand shines internationally. The estate extends over more than 100 hectares of its own vineyards, spread across six distinct properties from the north to the south of the region. Deeply committed to the ecological transition, the house stands out for its sustainable viticulture and the organic conversion of its vineyards, thus combining respect for tradition and modernity.
The vineyard
The 1.65-hectare parcel dedicated to this wine is located at the eastern end of the Grand Cru hillside of Chablis. The vines, averaging 45 years of age, thrive on a steep south-east-facing slope, in the coolest sector of the climat. They thus benefit from mainly morning sunshine. The terroir is characterised by thin limestone soils, dotted with white clays with bluish tints, resting on a subsoil typical of the Kimmeridgian, rich in marine fossils.
The vintage
The 2023 vintage offered overall favourable weather conditions, marked by a slightly warmer climate. This weather made it possible to achieve fine grape maturity while preserving the natural balance, giving rise to a slightly more generous and full-bodied profile than usual, while remaining perfectly true to its identity.
Winemaking and ageing
To craft the Chablis Grand Cru "Les Blanchots" Dom. Long-Depaquit 2023, the harvest is carried out by hand, followed by rigorous sorting and slow pressing at moderate pressure to respect the fruit. Alcoholic fermentation and ageing on fine lees take place 70% in stainless steel tanks and 30% in oak barrels aged three to five years, for a period of ten months. The final blend then benefits from an additional six months of refinement in stainless steel tanks before bottling.
