The Estate
Founded in 1831 by Bernard Bichot in Monthélie, the Albert Bichot House permanently settled in Beaune in 1912. Today, it is managed by Albéric Bichot, representing the sixth generation, and oversees a remarkable viticultural heritage of over 100 hectares, spread across six estates in Burgundy, including 13 hectares of Grand Crus and 26 hectares of Premier Crus. A pioneer in organic farming, the House stands out for its unique model combining a trading house and its own estates.
The Vineyard
La Moutonne is an exclusive Monopole of Domaine Long-Depaquit, formerly owned by the monks of Pontigny Abbey. This 2.35-hectare plot is located in a natural amphitheater in the heart of the Chablis Grands Crus and consists of 95% Vaudésirs Climat and 5% Preuses. The vines, averaging 40 years old, benefit from a south to south-east exposure on clay-limestone soils resting on Kimmeridgian marl. The slope, reaching a gradient of about 40% in the middle section, naturally protects the vineyard from north winds. A remarkable feature: a wall crosses the plot, with the lower part producing a rich and structured wine, while the upper part imparts floral notes and more tension.
Winemaking and Aging
The harvest of the Chablis Grand Cru "Moutonne" Domaine Long-Depaquit Monopole 2023 is carried out manually with strict grape selection. Pressing is slow with moderate pressure. Alcoholic fermentation and aging on fine lees last 10 months, with 75% in stainless steel tanks and 25% in 1 to 5-year-old oak barrels. An additional period of 6 months in stainless steel tanks follows this aging before bottling.
