Tasting
Appearance
The wine displays a straw-yellow color with golden highlights.
Nose
Elegant and complex, the nose combines citrus and white-flower aromas with a few subtle mineral touches. Over time, notes of dried fruits, rare spices and green tea emerge.
Palate
On the palate, the wine reveals a generous, rich and intense body underpinned by subtle oak. Its balanced structure and delicate minerality lead into a beautiful, aromatic, lingering finish.
Food and wine pairings
This wine is the ideal partner for delicate fish and carefully prepared shellfish, as well as poultry and white meats, roasted or served with a creamy sauce. A suggested pairing is chicken supreme with mushrooms in a cream sauce.
Serving and cellaring
The Chassagne-Montrachet 1er cru "Vide-Bourse" 2023 should be served between 12 and 14°C to fully appreciate its richness and finesse. It can be enjoyed young for its fruit, or cellared until around 2030, or even longer in top vintages.

The estate
Founded in 1831 in Monthélie by Bernard Bichot, the Albert Bichot House definitively set up in the heart of Beaune in 1912. Since 1996, Albéric Bichot has represented the sixth generation at the head of this Burgundy wine house. Owner of six outstanding estates spread from north to south across Burgundy, Albert Bichot farms more than 107 hectares of vineyards. The house stands out for its conversion to organic farming, Ecocert-certified since 2014, and for its pioneering environmental commitment, notably through experiments with ageing at sea aboard the sailing cargo ship Grain de Sail II.
The vineyard
The Climat of "Vide-Bourse" lies in the south of the Côte de Beaune, within the prestigious Côte des Blancs. Nestled within Bâtard-Montrachet, on the edge of the old road known as the "chemin de Couches", this terroir was classified as Premier Cru in 1974, joining the 21 other Premiers Crus of Chassagne-Montrachet. The terroir is characterized by highly draining clay-limestone soils, strewn with small stones, offering ideal exposure for optimal grape ripening.
Winemaking and ageing
The harvest for the Chassagne-Montrachet 1er cru "Vide-Bourse" 2023 is carried out by hand, with rigorous sorting of the bunches. After slow pressing at moderate pressure to respect the fruit, the must ferments in French oak barrels. Thirty to 35 % of the barrels are new, followed by ageing for 14 to 16 months on fine lees. This process gives this Burgundy wine remarkable aromatic complexity.
