Tasting

Appearance
This wine reveals a deep, intense red colour with a beautiful brilliance.

Nose
The aromatic bouquet is sophisticated, harmoniously blending red fruit aromas such as cherry and raspberry with delicate toasted notes and subtle hints of vanilla.

Palate
The attack is ample and fleshy, revealing a rich and powerful texture. The balance is perfect, supported by dense, well-integrated tannins that lead to a finish of remarkable persistence.

Food and wine pairings
This cuvée will pair wonderfully with finely prepared meats, whether roasted or in sauce, such as beef, duck or game. It will also enhance refined dishes such as beef fillet stuffed with mushrooms served with truffle mash, as well as medium to full-flavoured cheeses.

Serving and cellaring
It is recommended to serve the Corton Grand Cru "Clos des Maréchaudes" Dom. du Pavillon 2023 at a temperature between 16 and 17°C. With excellent ageing potential, it can be kept in the cellar and enjoyed until around 2033, or even beyond for lovers of older vintages.

An exceptional Corton Grand Cru in the heart of Burgundy

The estate
Founded in 1831 by Bernard Bichot, the Albert Bichot trading house is a true institution in Burgundy. Today led by Albéric Bichot, representing the sixth generation, this independent family-owned company oversees an exceptional heritage. The brand stands out for its vast vineyard of more than 100 hectares spread across six prestigious estates. Deeply committed to environmental respect, the estate favours organic and sustainable viticulture to precisely express the soul and singularity of its terroirs.

The vineyard
This wine comes from a 0.55-hectare plot located at the foot of the Corton hill, benefiting from an ideal east and south-east exposure. This Climat, one of the sunniest in the sector, encourages early ripening of the grapes. The vines, averaging 40 to 50 years old, draw their resources from brown limestone soils resting on very clayey scree. The estate applies sustainable viticultural methods, replacing chemical products with tilling and the use of compost.

Winemaking and ageing
To craft the Corton Grand Cru "Clos des Maréchaudes" Dom. du Pavillon 2023, the grapes are hand-harvested and then meticulously sorted upon arrival at the winery. Fermentation and maceration take place in temperature-controlled wooden vats for 18 to 21 days. The wine then benefits from ageing in oak barrels, including 35 to 45% new oak, for a period of 16 to 18 months in order to develop its full complexity.
