Poached pear, toasted almond, vanilla bean and cream flavors spread across the palate and linger long in the finish. Fermented and aged in oak barrels, with 20% of them new. Medium to full in body, layered and creamy in texture. Drink or hold.

Colour
The colour reveals a pale to medium golden hue, illuminated by subtle green highlights.

Nose
The nose opens with a lovely complexity blending delicate floral notes and white fruit aromas such as peach and pear, underscored by a touch of citrus and fine minerality. With aeration, nuances of brioche, hazelnut and vanilla emerge.

Palate
On the palate, the wine offers a voluptuous, creamy texture, perfectly balanced by lovely freshness. The mid-palate is concentrated without being heavy, leading to a persistent finish with notes of poached pear, brioche, citrus and flint.

Food and Wine Pairing

This white wine pairs wonderfully with delicate fish, whether poached or grilled, as well as seafood. It also pairs perfectly with white meats such as roast poultry or veal in cream sauce, white vegetables (leeks, asparagus, mushrooms), or Burgundian cheeses of moderate character such as Époisses.

The Estate

Founded in 1831 by Bernard Bichot in Monthélie before relocating to Beaune, the Albert Bichot house is a historic figure of Burgundy in France. Now led by Albéric Bichot, who represents the sixth generation since taking over in 1996, the estate oversees a vineyard of 107 hectares spread across six exceptional domains. Deeply committed to environmental stewardship, the house stands out for its transition to organic viticulture, seeking above all to express the authenticity of each terroir with minimal intervention.

The Vineyard

Domaine du Pavillon spans 19.5 hectares at the heart of the Côte de Beaune. The plots dedicated to this Meursault benefit from a continental climate and rest on complex soils composed of calcareous marl, Callovian rock and magnesium-rich limestone, situated between 230 and 360 metres in altitude. The vineyard is cultivated according to organic farming principles, officially certified since the 2018 vintage, thereby fostering biodiversity and respect for the natural ecosystem.

The Vintage

The year 2022 began with a cold, wet winter, allowing soil water reserves to be replenished. The growing season was then marked by complex weather conditions, with disrupted flowering leading to uneven berry ripeness. To address this, the harvest was staggered and carried out with great precision, beginning in late August with strategic pauses to allow each plot the time needed to reach optimal ripeness.

Winemaking and Aging

The winemaking of the Meursault Village "Domaine du Pavillon" 2022 is carried out with minimal intervention in small vats suited to each plot. The wine is then aged on fine lees for around twelve months, with regular lees stirring to develop its textural complexity. Barrel ageing includes around 20% new oak, lending subtle toasted notes while preserving the purity of the fruit.
