Tasting notes

Appearance
The colour generally reveals a pale yellow or golden hue, characteristic of the estate's white wines.

Nose
True to the identity of its climat, the nose displays remarkable aromatic purity, unfolding notes of white flowers, citrus and stone fruits, subtly enhanced by delicate buttery and toasted touches from the ageing process.

Palate
The palate stands out for its finesse and precision. It offers a very clear-cut mineral tension that perfectly balances the natural richness of the grape variety, revealing a structure that is both dense and refreshing.

Food and wine pairings

This white wine pairs harmoniously with pan-seared or grilled noble fish, as well as roasted shellfish. It also beautifully accompanies poultry in a creamy mushroom sauce, or cooked pressed cheeses such as Beaufort or Comté, and even an aged goat's cheese.

The estate

Founded in the late 2000s, the Au Pied du Mont Chauve estate stands out for its "haute couture" approach in Burgundy. Located in Chassagne-Montrachet, this 35-hectare property is now led by Francine Picard, heiress of the founding family. Driven by a deep respect for terroir, the estate distinguishes itself through certified organic viticulture and rigorous biodynamic practices. Thanks to a prestigious parcel selection and vinification of great precision, the property crafts authentic wines that combine elegance with the pure expression of their exceptional climats.

The vineyard

The "Les Vergers" climat is a historic terroir of Chassagne-Montrachet, once dedicated to fruit trees before being planted with vines in the 1960s and 1970s. Facing north-east on a gentle slope, this plot rests on stony, highly mineral soils dominated by white marls. The vineyard is managed with the highest agro-ecological standards, including biodynamic practices, natural grass cover and ploughing by horse in order to preserve soil vitality and biodiversity.

Winemaking and ageing

The harvest is entirely done by hand, followed by rigorous sorting in small crates. The whole bunches are gently pressed before an overnight settling in stainless steel tanks. Alcoholic fermentation takes place in barrels with indigenous yeasts. The making of the Chassagne-Montrachet 1er Cru "Les Vergers" 2025 continues with ageing on the lees for approximately 18 months, including 10 months in oak barrels, bringing structure and complexity to the wine while preserving the brightness of the fruit.
