Tasting
Appearance
This white wine reveals a pale gold hue enhanced by delicate greenish reflections in its youth.
Nose
The aromatic bouquet blends floral scents of hawthorn and acacia with mineral notes of gunflint, complemented by subtle hints of white peach and green almond.
Palate
Initially lively, the attack gives way to a beautiful fullness. The balance is remarkable between an elegant freshness and a smooth texture, extending into a persistent finish marked by a fine saline tension.
Food and wine pairing
This wine pairs wonderfully with firm-fleshed fish, grilled shellfish such as lobster with butter, or oysters. It also brilliantly accompanies white poultry with cream and mushrooms, or sole à la normande.
Serving and cellaring
To fully appreciate the Saint-Aubin 1er Cru "En Remilly" 2023, it is recommended to serve it at a temperature between 12 and 14°C. This wine can be enjoyed after a few years of cellaring and should be drunk until approximately 2033.
The Mineral Elegance of a Great White Burgundy
The estate
Founded in the late 2000s by the Picard family, the Au Pied du Mont Chauve estate is an essential reference in Burgundy. Led by Francine Picard, the property cultivates 35 hectares of vines, while the family's overall holdings amount to 140. Deeply committed to environmental respect, the estate practises biodynamic viticulture under the technical expertise of Antoine Lepetit de la Bigne. This meticulous approach allows the authenticity and purity of the prestigious terroirs of the Côte de Beaune to be fully revealed.
The vineyard
A plot located above the Montrachet hill, at the junction of Chassagne, Puligny and Saint-Aubin. The vines thrive on marl-limestone rocks and compact limestone, with a poor and shallow soil. The arid hillside is home to Mediterranean vegetation. Covering 0.35 hectare, this terroir includes vines planted between the 1970s and 2010.
The vintage
The year 2023 began with a mild winter followed by a magnificent spring flowering. The summer season was then marked by significant climatic variability, alternating periods of intense heat with cooler spells, punctuated by occasional rainfall. These conditions accelerated the vegetative cycle, leading to an early harvest at the end of August, yielding healthy and abundant grapes.
Vinification and ageing
The hand-harvested grapes, picked in small crates, are followed by a gentle pneumatic pressing of whole bunches. After a twenty-four-hour static settling in stainless steel tanks, the alcoholic fermentation of the Saint-Aubin 1er Cru "En Remilly" 2023 begins in oak barrels with indigenous yeasts. Ageing continues on fine lees for approximately eighteen months, with 25% new oak, 40% one-wine barrels and 35% two-wine barrels and older (aged in 350L casks).
