Description

The producer
The history of Caves du Paradis began almost 60 years ago, when Alex Roten founded his company in 1959 in the Paradis district of Sierre in Switzerland. Progressively, thanks to his determination and his unfailing love for vines, he managed to acquire numerous plots of land in the region. He focuses his vision on the diversity of each terroir as well as the unique wine that they produce. In 1989, Raphaël Roten took over the estate in order to live out his passion for wine that has always driven him. Today, Olivier Roten follows his father and grandfather’s philosophy and succeeds them as the head of the estate.
The vineyard
Les Caves du Paradis has only 10 hectares of vines, but their quality enables them to offer some of the finest Swiss wines. Located near the villages of Sierre, Miège and Salquenen, the vineyards benefit from nearly 300 days of sunshine per year. In fact, these ideal weather conditions have given Sierre its nickname, "City of the Sun".
Dôle Coteaux de Sierre 2020 is produced in the Valais appellation on hillsides located between 600 and 800 metres above sea level. The vines are rooted in a soil that is influenced by sand, silt and rock.
The vinification and ageing
Following the manual harvest and the work in the vineyard which is part of a sustainable viticulture process, the grapes go to the cellar to begin a customised vinification process. Fermentation is carried out in stainless steel tanks and the wine is aged for at least 6 months in concrete tanks.
The blend
Pinot Noir (70%) and Gamay (30%).
The tasting
Dôle Coteaux de Sierre 2020 is one of the few blends allowed in the Valais appellation. The encounter between the finesse of Pinot Noir and the power of Gamay conjures up a perfect balance.
