Cesari reveals an aromatic and elegant red wine from Amarone della Valpolicella Classico

The estate

In 1936, Gerardo Cesari acquired vineyards on the hills of Valpolicella in Veneto, thus giving his name to the estate.

Some years later, his son, Gerardo, wanted to produce Amarone and for the wines by the Cesari estate to become part of the elite amongst Italian wines. This ambition drove him to develop new vitivinicultural techniques, as well as a sustainable approach within all of his vineyards. Thanks to his efforts, his Amarone della Valpolicella Classico is the first wine to experience strong international development.

 The vineyard

The Cesari estate overlooks a terroir of over 100 hectares spread over 4 vineyards: Bosan, Il Bosco, Jèma and Centofilari.

The wine

L’Amarone della Valpollica Classico Il Bosco de Cesari is exclusively produced from grapes which come from the "Il Bosco" vineyard, made up of vines that are more than 18 years old.

The vintage

2000 was a year marked by the earliness of the crop cycle. Good springtime conditions encouraged flowering and the crop cycle. Lowered temperatures throughout July slowed down the cycle, but did not impact the earliness of the vineyard’s crops. Although the yields were 5 to 15% lower compared to the previous year due to climatic conditions, the harvests, which began around a week earlier than normal, were very high in quality. The berries wree healthy, with thick skins and a good concentration of pulp and sugar.

Winemaking and ageing

Only produced during the greatest vintages, the Amarone della Valpolicella Classico Il Bosco by Cesari is produced from a rigorous selection carried out during manual harvests to only conserve the best berries during the production of this exceptional wine.

In keeping with tradition, the selected grapes go through a natural drying process, appassimento or raisining, typical to Valpolicella. Placed in shallow boxes and in single layers, the grapes dry until the end of January in well-ventilated locations, referred to as fruit cellars, to avoid being attacked by mold. During this drying period, the grapes lose 30 to 40% of their weight and concentration in sugar. The maceration with grapeskin contact lasts for 20 to 30 days. Fermentation is carried out using selected yeasts. Once the lees have been removed, the juices are placed into vats for malolactic fermentation, after which the wine is aged to French oak and in large Slavonian oak barrels for two years. Following bottling, an additional ageing of 6 to 8 months is carried out.

Blend

L’Amarone della Valpolicella Classico Il Bosco 2000 by Cesari Cépages is produced from a blend of around 80% Corvina and 20% Rondinelle.

The wine is beautiful deep red with violet reflections.

Nose

The nose exudes typical notes of cherry, spices, cocoa and bitter almond.

Palate

Full-boded all while presenting a great elegance, the palate seduces with its velvety touch, its complexity and its delicacy.
