Description
Characteristics and Tasting Tips for the Mercurey 1er Cru "Champs-Martin" 2025 from Château de Chamirey
Food and Wine Pairings
This wine pairs beautifully with grilled or roasted red meats, such as a rib steak, a côte de bœuf or a leg of lamb, as well as dishes seasoned with gentle spices. It also works very well with mature cheeses of pronounced character.
A Mercurey 1er Cru That Stays True to the Clay-Limestone Terroir of Château de Chamirey
The Estate
Since 1934, the year the Marquis de Jouennes decided to bottle the wines of Château de Chamirey at the estate, the property has belonged to the Devillard family. Located in Mercurey, in Burgundy, this 37-hectare estate is now run by Bertrand Devillard, alongside his children Amaury and Aurore, the family's fifth generation. Nearly half of the vineyard is classified Premier Cru, including two recognised monopoles, Les Ruelles for red and La Mission for white.
The Vineyard
The Mercurey 1er Cru "Champs-Martin" comes from a 0.49-hectare plot planted in 2002, facing due south on a gently sloping hillside. The soil, predominantly clay and highly calcareous, is crossed by a central limestone vein that promotes natural drainage and deep rooting, conditions conducive to the balance of Pinot Noir.
Vinification and Ageing
The Mercurey 1er Cru "Champs-Martin" 2025, currently ageing, follows the estate's consistent philosophy: hand harvesting, rigorous sorting of the harvest, partial destemming, followed by cold pre-fermentation maceration designed to reveal the aromatic potential of the berries. Fermentation is carried out with indigenous yeasts, before full ageing in 228-litre oak barrels.
Grape Variety
100% Pinot Noir.
