The Estate
Domaine Robert Chevillon represents one of the essential references of Nuits-Saint-Georges. Founded in 1961 when Robert Chevillon decided to vinify and market his own wines rather than selling his harvest to the trade, the estate today extends over 13 hectares including eight prestigious Premier Crus. Since 2003, brothers Denis and Bertrand Chevillon, the fifth generation of winegrowers, have perpetuated the family legacy with a constant commitment to the crystalline expression of terroirs. The estate is internationally recognized for the purity and precision of its wines, fruits of sustainable viticulture and exceptional old vines.
The Vineyard
The Nuits-Saint-Georges Village "Vieilles Vignes" stems from a blend of several plots distributed across the entire appellation, totaling approximately 3.3 hectares. The vines, averaging fifty years of age, are rooted in varied soils characteristic of the appellation: pink Premeaux limestone, gravelly brown earth at altitude, and reddish silts mixed with gravel below. This diversity of terroirs confers remarkable aromatic complexity and depth to the wine. The vineyard benefits from an ideal south-east exposure on the slopes of the Côte de Nuits, favoring optimal ripening of the Pinot Noir.
The Vintage
The 2018 vintage in Burgundy was characterized by a particularly wet winter and spring, replenishing the soil's water reserves. The summer was then marked by a prolonged heatwave and arid conditions from June to September, recalling the legendary 1947 vintage. These hot conditions particularly favored the old vines, whose deep root systems were able to draw the necessary water. The grapes reached exceptional phenolic maturity with remarkable sanitary health. The harvest took place under sunny weather, allowing for the gathering of fruits of remarkable generosity and balance, combining concentration and preserved freshness.
Winemaking and Aging
The grapes for the Nuits-Saint-Georges Village "Vieilles Vignes" 2018 are harvested manually and then sorted with care. After complete destemming, the berries undergo cold pre-fermentation maceration for three to six days, allowing for gentle extraction of aromatic and coloring compounds. Alcoholic fermentation takes place in temperature-controlled stainless steel vats with automatic punching down and daily pumping over, over a period of three to five weeks. After malolactic fermentation, the wine is aged for approximately 18 months in French oak barrels, 20% of which are new wood, the rest being barrels used for two to three wines. The wine is bottled by gravity, without filtration or fining.
