Appearance

The appearance unveils a deep ruby color with slight purple tints, bearing witness to the phenolic richness and concentration of the vintage.

Nose

The nose expresses itself with beautiful aromatic intensity, revealing dominant notes of ripe red fruit, notably black cherry and raspberry. Discreet spicy touches accompany this fruity bouquet, complemented by nuances of undergrowth, fine leather and subtle minerality. With aeration, delicate floral notes of rose and wild flowers gradually emerge.

Palate

On the palate, this wine seduces with its velvety texture supported by fine, silky tannins. The substance is very fine, fresh and suave, with a beautiful presence of ripe fruit. The estate

Domaine Robert Chevillon has represented one of the essential references of Nuits-Saint-Georges since the beginning of the 20th century. Founded by Symphorien Chevillon around 1900 with about 30 ares of vines, the estate has progressively expanded over generations to reach thirteen hectares today, including eight parcels classified as Premier Cru. Robert Chevillon was the first of the family to bottle the estate's wines in the 1960s and 1970s, marking the entry into the era of controlled quality. Since 2003, his sons Denis and Bertrand have jointly managed this operation, which has become a global reference, perpetuating a viticultural philosophy focused on the authentic expression of the terroir without artifice.

The vineyard

The Nuits-Saint-Georges Village "Vieilles Vignes" 2019 comes from plots located just outside Nuits-Saint-Georges, on the clay-limestone soils characteristic of the appellation. The advanced age of these vines confers particular depth and concentration to the grapes, thanks to deep root systems that allow the plants to draw on abundant mineral reserves. The vines benefit from favorable exposure and are managed using sustainable viticulture, prioritizing respect for the environment and manual interventions. The estate practices plowing between rows, limits the use of phytosanitary products and carries out meticulous maturity checks twice a week before the manual harvest.

The vintage

The 2019 vintage in Burgundy ranks among the exceptional years of the last decade. After an extremely mild winter and a cool spring, the summer was hot and sunny, favoring complete ripening of the Pinot Noir and reaching exceptional levels of aromatic concentration. The early harvest, carried out about two to three weeks before the historical average, allowed for the grapes to be picked at optimal maturity, with maximum aromatic concentration while preserving fresh acidity. This rare combination of fruity richness and structural freshness confers a remarkable balance to the 2019 vintage.

Winemaking and aging

The grapes for the Nuits-Saint-Georges Village "Vieilles Vignes" 2019 are entirely destemmed then placed in stainless steel vats for a cold pre-fermentation maceration of five to six days at around 10°C. Alcoholic fermentation is conducted naturally with indigenous yeasts, accompanied by daily punching down and pumping over for two to three weeks. After natural malolactic fermentation, the wine is aged in French oak barrels for fifteen to eighteen months, with only thirty percent new wood in order to preserve the expression of the terroir. Three to four weeks before bottling, the wines are blended to harmonize the different barrels, before bottling by gravity which preserves the aromatic integrity of the wine.
