Food and wine pairing

This wine pairs ideally with roasted or grilled red meats, such as a rib of beef, as well as poultry in sauce or feathered game. It also shows beautifully alongside fine, dry cheeses from Burgundy.

The Givry 1er cru "Servoisine" 2025 is best enjoyed at a temperature between 12 and 15°C.

The estate

Domaine de la Ferté, whose vines date back to the Cistercian monks of the 12th century, was taken over in 1995 by Bertrand Devillard, who also heads Château de Chamirey and Domaine des Perdrix. Located in Givry, in the Côte Chalonnaise (Burgundy), the estate is devoted exclusively to Pinot Noir and farms its vines using sustainable viticulture. It is now run by the Devillard family, renowned for the quality and accessibility of their wines.

The vineyard

Coming from the Premier Cru climat "La Servoisine", one of the finest terroirs of Givry, this wine comes from a 0.67-hectare plot planted with old vines of more than 45 years of age. Facing south or south-east on a mid-altitude slope, the soil is composed of clay, silt and active limestone. The vineyard is farmed using sustainable methods, with hand-harvesting and rigorous grape sorting.

Winemaking and ageing

For the production of the Givry 1er cru "Servoisine" 2025, the grapes are hand-harvested and hand-sorted before a maceration with regular punching down, the intensity of which is adjusted to achieve a controlled extraction of tannins, colour and aromas. Alcoholic fermentation relies on the indigenous yeasts naturally present on the fruit. Ageing takes place in 228-litre Burgundy barrels, with a measured proportion of new oak, followed by a complete malolactic fermentation.
