Tasting
Appearance
Clear and particularly brilliant, this wine reveals a deep pink hue, enhanced by delicate raspberry highlights and subtle ruby nuances.
Nose
The bouquet opens with beautiful complexity, combining aromas of ripe red fruits (crushed strawberry, raspberry, cherry) and white fruits such as nectarine. With aeration, floral notes of violet and carnation emerge, accompanied by hints of citrus, white pepper, and a minerality reminiscent of crushed limestone.
Palate
The attack is lively and marked by great freshness, introducing a full and concentrated texture. The mid-palate unfolds a fleshy texture supported by very fine tannins. The whole is stretched by a lovely mineral tension leading to an energetic, chalky finish with remarkable persistence.
Food and wine pairings
This great gastronomic wine pairs beautifully with white meats such as roast chicken or herb-crusted rack of pork. It also enhances seafood, from fleshy fish like turbot or salmon to delicate shellfish. Finally, it pairs perfectly with Mediterranean-inspired dishes, octopus salad, paella, or lightly spiced Asian cuisine.
Serving and cellaring
To fully appreciate this Tavel Rosé, it is recommended to serve it at a temperature between 50 and 54°F. This wine can be enjoyed now and will continue to evolve favorably until around 2030.
The elegance and minerality of a rosé wine from the Rhône Valley
The estate
Founded in 1986 by Francis Delorme and his son Christophe, the Domaine de la Mordorée quickly established itself as a benchmark in the Rhône Valley. Spanning nearly sixty hectares, this family-owned property stands out for its deep commitment to environmental preservation. Today, Madeleine Delorme and her daughter Ambre manage the estate with passion, perpetuating a demanding philosophy. Certified in organic and biodynamic agriculture, the vineyard produces cuvées renowned for their purity and authentic expression.
The vineyard
The grapes come from plots located in the Tavel appellation, more specifically on the Vallongue plateau and a Villafranchian terrace. This exceptional terroir is characterized by sandy-clay soils covered with rounded pebbles, offering optimal natural drainage. Swept by the mistral and benefiting from a sunny Mediterranean climate, the vines are cultivated according to strict biodynamic principles. Pruning in gobelet or Royat cordon, combined with natural grass cover, promotes soil vitality and berry concentration.
Winemaking and aging
After entirely manual harvesting and rigorous sorting, the berries are destemmed and gently crushed. A short cold skin maceration allows the extraction of color and aromas. Alcoholic fermentation then takes place under controlled temperatures, exclusively with indigenous yeasts. Finally, the wine benefits from extended aging in stainless steel tanks, without any contact with wood, in order to preserve all its freshness and minerality.
