Tasting
Appearance
The wine shows a bright, pale yellow hue with greenish highlights and a slight viscosity.
Nose
The nose reveals aromas of white flowers and citrus such as lemon, alongside notes of green apple. A mineral, maritime dimension comes through in touches of crushed stone and sea spray.
Palate
On the palate, the wine displays lovely acidic tension and a fine texture. A subtle creaminess from the ageing process balances an austere, saline minerality. The finish is long, marked by iodine nuances and lemon zest.
Food and wine pairing
This white wine is an ideal match for raw shellfish such as oysters, seafood or ceviche. It also pairs beautifully with grilled white fish, as well as fresh or lightly aged goat's cheeses.
Serving and cellaring
The 2025 "Briords" cuvée will be at its best after a few years of cellaring and will continue to develop gracefully until around 2033.
A great Loire white wine by Domaine de la Pépière
The estate
Founded in 1984 by Marc Ollivier, Domaine de la Pépière is located in Maisdon-sur-Sèvre, in the Pays Nantais, in the heart of the Loire Valley in France. The vineyard, which now covers more than 40 hectares, has grown through the acquisition of carefully chosen plots on high-quality terroirs. Currently run by Rémi Branger and Gwénaëlle Croix, the estate stands out for its early commitment to environmentally friendly viticulture. The domaine highlights the expression of its soils through certified organic and biodynamic practices, producing precise terroir-driven wines.
The vineyard
From the Muscadet Sèvre et Maine sur Lie appellation, this cuvée comes from the Clos des Briords lieu-dit. This three-hectare plot is made up of very old vines planted between 1930 and 1950, propagated by massal selection. They thrive on a subsoil of Château-Thébaud granite, rich in feldspar and clay. This free-draining terroir, composed of sand, gravel and clay, allows the roots to reach deep. All of these vines are farmed according to certified organic and biodynamic principles.
Vinification and ageing
The grapes for the 2025 "Briords" cuvée are harvested by hand. The bunches are carefully transported, then gently pressed as whole clusters in a gravity-fed pneumatic press, without prior crushing. After natural settling, fermentation begins spontaneously with indigenous yeasts, without any chaptalisation. The wine is then aged on its lees for eight to nine months in large underground tanks, without racking. It is bottled unfined and unfiltered to preserve its purity.
