The purity and saline tension of a white wine from L'Étoile by Domaine des Marnes Blanches
The estate
Founded in 2006 by Pauline and Géraud Fromont, who still lead the estate today, Domaine des Marnes Blanches quickly established itself as a key reference in the Jura. Located in the Sud Revermont, this estate spans a vineyard of about ten hectares. Driven by a deep commitment to preserving their terroir, the owners adopted organic farming practices right from the estate's founding. Their cuvées stand out for their minimal-intervention approach, authentically revealing the richness of the Jura terroirs.
The vineyard
This wine comes from the L'Étoile appellation, a terroir renowned for the finesse of its white wines. The vines flourish on specific soils composed of white marls dating back to the Triassic period. This distinctive terroir, rich in minerals, gives the grapes an exceptional concentration and a strongly marked saline identity.
Winemaking and aging
The making of the Savagnin "Au Rettin" 2022 is rooted in a philosophy of respecting the fruit, beginning with gentle whole-bunch pressing and fermentation carried out by indigenous yeasts. The wine is then aged for 34 months in traditional wooden barrels and half-muids. This is a topped-up wine (ouillé), with the containers regularly refilled to prevent any oxidation, thus preserving the freshness and purity of the aromas.
Grape variety
Savagnin (100%). An emblematic and historic grape variety of the Jura vineyards, Savagnin is renowned for its ability to produce wines with great aging potential, whether topped-up or aged under a veil of yeast (sous voile). Here, it lends all its aromatic power, its structuring acidic backbone, and its characteristic notes of dried fruits and spices.
