Tasting notes
Appearance
The wine reveals a deep purple-red hue in its youth, evolving towards subtle garnet and brick nuances over time.
Nose
Complex and delicate, the nose unveils aromas of wild fruits such as raspberry and morello cherry, enhanced by fresh herbaceous touches. It then opens up to notes of violet, liquorice, black cherry and subtle smoky nuances.
Palate
Elegant and mineral, the palate offers an airy texture supported by delicately coated tannins. With a lovely medium body, it stretches towards a persistent and refined finish.
Food and wine pairing
This wine pairs wonderfully with red meats such as a fine cut of beef, a tartare or dishes in sauce such as coq au vin. It also perfectly accompanies roasted poultry, duck, as well as aged cheeses such as Comté or Époisses.
Serving and cellaring
For optimal tasting, it is recommended to serve this wine at a temperature between 16 and 17°C. It can be enjoyed now but will continue to evolve until around 2044.
The elegance and minerality of a Givry Premier Cru
The estate
Founded around 1130 by Cistercian monks, Domaine du Cellier aux Moines is a historic property located in Burgundy. Acquired in 2004 by Philippe and Catherine Pascal, the estate now extends over 10.5 hectares of vines. Together with their children and Guillaume Marko, the current owners have carried out major restoration work, including the creation of a gravity-flow winery in 2015. Committed to environmentally friendly viticulture, the estate has been certified organic since 2020 and biodynamic since 2023, thus combining centuries-old heritage with technical excellence.
The vineyard
This Givry Premier Cru wine comes from a vineyard of nearly 5 hectares. The vines lie on slopes facing mid-slope and at the top of the slope, benefiting from optimal sunshine. The soils, of great diversity, are mainly composed of clay and limestone, with stony, silty and marly variations. The estate favours an approach that respects biodiversity, with exclusively manual harvesting allowing a rigorous selection of the best grape bunches.
The vintage
The year 2024 was marked by difficult weather conditions in Burgundy, leading to significant drops in yields due to frost and other climatic hazards. However, the Côte Chalonnaise was more spared. A sunny period in September allowed the berries to reach beautiful ripeness, requiring late harvesting and extremely meticulous sorting to preserve the quality of the fruit.
