Tasting
Appearance
The wine reveals an intense, luminous pale yellow colour, enhanced by delicate golden highlights.
Nose
Highly expressive, the aromatic bouquet opens with notes of stone fruit such as peach and apricot. It is then enriched with hints of citrus zest and subtle nuances of vanilla.
Palate
The palate seduces with a texture that is both smooth, supple and complex, unfolding across several layers. The whole is perfectly balanced by a lively freshness, leading to a particularly harmonious and lingering finish.
Food and wine pairing
This cuvée pairs beautifully with oysters, terrines or a veal fricassee. It will also be an ideal accompaniment to a wide variety of poultry dishes.
Serving and cellaring
For optimal tasting, this 2023 Mâcon-Solutré is best served at a temperature between 9 and 12°C. This white wine can be enjoyed now and will continue to evolve favourably until around 2028.

The estate
Located in the heart of Burgundy, the Domaine du Roc des Boutires estate oversees a vineyard of 4.2 hectares. While the vines were mostly planted in the 1970s, the estate has experienced a new dynamic since its acquisition in 2016 by the Parinet family, who also own Château du Moulin-à-Vent. Now run by Édouard Parinet, with Brice Laffond overseeing technical matters, the estate stands out for its meticulous plot-by-plot approach and environmentally friendly practices. This estate produces white wines renowned for their precision and their faithful expression of terroir.
The vineyard
The grapes used for this Mâcon-Solutré come from a little-known appellation of around 50 hectares. The vines, roughly 45 years old, thrive on clay-limestone soils situated between 210 and 430 metres in altitude, with a south and south-east facing exposure looking towards the famous Roche de Solutré. This Burgundy vineyard is farmed using sustainable methods inspired by organic and biodynamic agriculture, including soil cultivation, massal selections and a deep respect for the vine.
Winemaking and ageing
The grapes are hand-harvested into small crates. After whole-bunch pressing, the must for this 2023 Mâcon-Solutré undergoes cold settling at 8°C. Fermentation then starts spontaneously thanks to native yeasts and lasts around twenty days. Malolactic fermentation is also carried out. The wine is aged for twelve months, with 70% in stainless steel tanks and 30% in oak barrels. It is bottled without fining and with only very light filtration.
