Colour
The glass reveals a beautiful, vivid red colour.
Nose
The aromatic bouquet opens with a lovely intensity of red fruit, reminiscent of cherry and berries, underscored by subtle hints of smoked meat. With aeration, delicate floral notes of violet emerge, accompanied by savoury, toasted nuances evoking rosewood and sandalwood.
Palate
Soft and caressing, the initial impression gives way to a palate dominated by flavours of red fruit jams and jellies. This indulgence is perfectly balanced by the freshness of blood orange. The mid-palate reveals a lovely saline minerality, enhanced by spices such as freshly ground black pepper, along with notes of blackberry, liquorice, tobacco and chocolate. Herbaceous touches of mint, verbena and coriander add further complexity. The tannins are elegant and velvety, leading to a taut, refined finish with remarkable saline persistence.
Food and wine pairing
This cuvée pairs wonderfully with roasted or grilled red meats such as beef and lamb, as well as feathered game like duck or quail. It will also enhance rabbit in a creamy mushroom sauce, stir-fried vegetables, or a mushroom risotto. When it comes to cheese, opt for aged raw-milk varieties such as Comté, Beaufort or Reblochon, or even a Camembert at its peak ripeness.
Service and storage
This Volnay 1er Cru "Santenots du Milieu" 2022 can be enjoyed now, but it also boasts excellent ageing potential, allowing it to develop in the cellar until around 2037.
The elegance and purity of a great red Volnay
The estate
Founded in 1992 in Meursault, at the heart of Burgundy, Domaine François Mikulski was born from François and Marie-Pierre Mikulski's desire to produce authentic cuvées. The estate quickly distinguished itself through its environmentally respectful approach and sustainable viticulture, refusing to give in to commercial trends. Today, family continuity is ensured by their daughter Anna Mikulski and her husband Thomas Boccon, who run the property with the same philosophy. They are committed to expressing the purest identity of their terroirs through uncertified organic methods and rigorously controlled yields.
The vineyard
This wine comes from the prestigious terroir of Volnay, and more specifically from the climat of "Santenots du Milieu". The vines, planted in 1947 and 1976, benefit from an ideal east and south-facing exposure, within a small valley sheltered from the wind. The soil is composed of a thin layer of red clay resting on a bed of hard limestone, with a subsoil of brown silt and fractured rock. The vineyard is maintained mechanically through ploughing, with no use of herbicides, in order to preserve biodiversity and soil health.
The vintage
The year 2022 offered particularly favourable weather conditions and ripening cycle in Burgundy. This ideal climate allowed the berries to reach a perfect balance, giving rise to a vintage distinguished by its harmony, remarkable freshness and vibrant fruit profile.
Winemaking and ageing
Following a harvest carried out at optimal ripeness, the grapes undergo careful sorting. Fermentation then takes place in temperature-controlled vats over 15 to 17 days, allowing for gentle extraction. The wine is subsequently transferred into oak barrels, 35% of which are new, for an ageing period of approximately 14 months before bottling, with minimal intervention throughout in order to preserve the expression of the fruit.
