The estate
The family's winemaking history began in the early 1900s, but it was in 2005 that Henri Boillot bought out the family shares to officially create Domaine Henri Boillot. Located in Meursault, at the heart of Burgundy, the estate is now run by Henri, who focuses on the white wines, and his son Guillaume, who has been in charge of the red wines since 2012. The estate stands out for its respectful approach to the vine, initiated back in the 1990s, and its commitment to faithfully expressing the purity of each terroir.
The vineyard
The vines that give rise to this Bourgogne are cultivated according to the principles of sustainable farming. The estate favours a sustainable approach, incorporating organic and biodynamic practices. Human intervention is deliberately limited in order to preserve the natural balance of the soils and allow the plant to fully express its environment.
The vintage
The year 2023 was marked by a particularly abundant harvest. The growing cycle benefited from mild weather conditions, with sufficient water reserves and a gentle spring. Late budbreak helped avoid spring frosts. Summer brought consistent warmth without extreme peaks, preserving the freshness of the berries. A final heatwave just before harvest, which began in early September, allowed the grapes to reach optimal ripeness.
Winemaking and aging
The making of this Bourgogne Pinot Noir 2023 relies on gentle extraction and minimal handling. The vinification combines whole clusters and destemmed berries. The wine is then aged in oak barrels, with a proportion of new wood ranging from 50% to 70% depending on the cuvée, to support the wine without masking the identity of the fruit.
