The estate
Founded in 1973 by Hubert Lamy, Domaine Hubert Lamy is an essential reference in Burgundy. Now run by his son Olivier Lamy, supported by his wife Karine, the estate spans 18.5 hectares. Olivier has profoundly transformed the domaine since his arrival in the late 1990s, notably by favoring Chardonnay and introducing innovative practices such as very high-density planting. Renowned for its meticulous approach and minimalist winemaking, the estate produces wines of exceptional precision.
The vineyard
The "En Remilly" climat is considered one of the most prestigious premiers crus of Saint-Aubin, ideally located in the extension of the famous grands crus of the Montrachet hill. South-facing, the vines cultivated by the estate cover two hectares and were planted in 1989. They thrive on rocky soils composed of fine, hard limestone, covered with a thin layer of clay. The vineyard is farmed according to sustainable practices, without herbicides, with regular soil work and Guyot Poussard pruning to preserve the longevity of the vines.
The vintage
The year 2020 was characterized by particularly hot and dry weather conditions, with sunshine levels 25% above usual averages. This weather led to a historic early growing cycle, resulting in very early harvests. Despite this heat, the grapes harvested retained a superb balance between sugar concentration and acidity.
Winemaking and aging
For this Saint-Aubin 1er Cru "En Remilly" 2020, the harvest was carried out entirely by hand on August 27. The bunches underwent a gentle, extended pneumatic pressing of about two and a half hours, without prior crushing. The must, cooled to 12°C, was directly transferred into barrels without settling in order to preserve maximum lees. Fermentation took place using indigenous yeasts. Due to the richness and warmth of the vintage, no new barrels were used. Aging continued for 12 months, without any pumping over or lees stirring, in order to preserve the wine's brightness and minerality.
