Tasting
Colour
This white wine from France reveals a bright hue ranging from pale yellow to light gold, subtly tinged with green highlights.
Nose
The aromatic bouquet opens with notes of white-fleshed fruit, green apple and citrus such as lemon. A delicate touch of vanilla intertwines with a deep minerality reminiscent of wet chalk and stone.
Palate
From the very first sip, the palate is taut and incisive, carried by a lively acidity. The dense, structured texture is balanced by a slight richness imparted by the ageing process. The particularly mouth-watering finish extends the intense lemony and stony flavours.
Food and wine pairing
This Chablis 1er Cru Les Butteaux pairs wonderfully with seafood, such as grilled turbot, scallops or a platter of oysters. Its structure also allows it to accompany roasted white meats or matured goat's cheese.
Service and storage
To fully appreciate this Chablis 1er Cru "Les Butteaux" 2022, it is recommended to serve it at a temperature of around 12°C. With its fine structure, it can be enjoyed now or cellared until around 2032.

The estate
Founded in 1850 by Jean-Victor Laroche, Domaine Laroche is an iconic name in Burgundy. Located in the heart of the village, the house is home to the Obédiencerie, a former 9th-century monastery. The vineyard now spans 90 hectares, covering all the local appellations. Part of the AdVini group since 2009, the estate is currently run by Jean-Baptiste Mouton. A pioneer of sustainable viticulture, the estate stands out for its strong agroecological commitment, certified HVE 3, aimed at preserving biodiversity and the authentic expression of its terroirs.
The vineyard
The one-hectare plot dedicated to this cuvée is located on the left bank of the Serein, within the Les Butteaux climat, part of the Montmains group in Chablis. The vines flourish on white Kimmeridgian limestone marl soils, rich in marine fossils. The vineyard is managed according to strict agroecological principles: herbicide-free soil cultivation, pheromone-based pest control, massale selection and biodiversity preservation through the planting of hedgerows and beehives.
The vintage
The 2022 vintage offered milder, more generous weather conditions than the previous year. Despite some weather-related and disease pressure in spring requiring increased vigilance, the growing cycle resulted in satisfactory yields and berries of excellent quality.
Winemaking and ageing
The grapes destined for this Chablis 1er Cru "Les Butteaux" 2022 are whole-bunch pressed before undergoing cold settling. Fermentation begins naturally thanks to indigenous yeasts. Ageing then takes place on fine lees for around nine months, exclusively in oak barrels of various capacities (228, 400 and 600 litres) that have already held several wines, in order to preserve the aromatic purity.
