The elegance and mineral precision of a Saumur-Champigny wine
The estate
Founded in 2021, Domaine Moly is a promising estate in the Loire Valley. Located in Distré, this roughly four-hectare vineyard is now run by Etienne and Aurélia Moly. After international careers and thorough training with renowned figures from the region, the couple chose to return to France to craft their own cuvées. Guided by a respectful approach to living systems, they produce wines with a strong sense of identity, faithfully and purely reflecting the geological richness of their terroirs.
The vineyard
The grapes for this cuvée come from the estate's oldest vines, spread across the communes of Chacé, Varrains, and Chaintres within the Saumur-Champigny appellation. This terroir is characterized by light, fine soils made up of silt and sand, resting on a subsoil of Middle Turonian tuffeau, known as green chalk. The plots benefit from varied exposures, notably to the east, as well as differences in altitude that favor optimal ripening of the berries.
The vintage
In the region, 2023 was marked by contrasting weather conditions throughout the growing cycle, illustrating the climatic variability typical of this area.
Winemaking and aging
To create the Saumur-Champigny "Sybarites" 2023, the bunches are fully destemmed before fermentation in stainless steel tanks, triggered by indigenous yeasts. Maceration is short, lasting eight to ten days, to extract delicate tannins. The free-run and press wines are aged separately. Aging then takes place over twelve to fifteen months in large 400-liter oak barrels, one-third of which are new, to preserve the brightness of the fruit.
