Colour
The colour reveals a beautiful ruby red hue.

Nose
The bouquet opens with fresh red fruit aromas such as cherry, raspberry and cranberry. It is enriched by delicate floral notes reminiscent of violet and rose, underlined by subtle touches of undergrowth and earth.

Palate
On the palate, this wine stands out for its silky texture and refinement. The fruity expression dominates, accompanied by a fine earthy touch. The tannins are round, ripe and perfectly integrated, supported by a lovely acidity that brings a vibrant freshness. The finish, of moderate length, ends on crisp notes of red fruit and a hint of minerality.

Food and wine pairing

This red wine pairs wonderfully with herb-roasted poultry, a traditional coq au vin or duck breast with cherries. It also goes very well with charcuterie platters, mature cheeses such as Comté or Brie, as well as vegetarian mushroom dishes such as a risotto or a mushroom bourguignon.

Service and storage

For optimal enjoyment, it is recommended to serve this Bourgogne Pinot Noir 2022 at a temperature between 16 and 18°C. Approachable in its youth, this wine can also be cellared and enjoyed until around 2037.

Other characteristics

This wine is bottled without fining or filtration, which helps preserve its full aromatic complexity. It may therefore show a slight natural sediment.

The elegance and freshness of a red Burgundy wine

The estate

Founded in 1997 by Nicolas Rossignol, who represents the fifth generation of winemakers in his family, Domaine Nicolas Rossignol is a renowned estate in Burgundy, France. Initially spanning three hectares, the estate now extends over approximately seventeen hectares across the Côte de Beaune. Still at the helm of the estate, Nicolas Rossignol oversees all operations with a minimally interventionist philosophy, valuing the pure expression of each terroir. The estate stands out for its sustainable viticulture, manual harvesting and meticulous attention to every plot.

The vineyard

The grapes for this Bourgogne wine come from plots located in the plains of Volnay and Pommard. Aged between twenty and fifty years, the vines grow on poor, very well-drained soils, limiting vegetative vigour and encouraging berry concentration. The vineyard is managed through sustainable farming, with no chemical herbicides, light ploughing and practices inspired by biodynamics.

The vintage

The year 2022 began with a mild winter and spring, leading to early flowering as early as May. Summer proved particularly hot and sunny, raising concerns of drought. Fortunately, saving rains fell at the end of June and in mid-August, relieving the vines of water stress, ensuring optimal grape ripening and resulting in a generous harvest of excellent quality.

Winemaking and aging

After a thorough manual and mechanical sorting, the grapes are transferred into vats by gravity. Fermentation of the Bourgogne Pinot Noir 2022 begins with indigenous yeasts and lasts about six to eight days, punctuated by tailored pump-overs and punch-downs. The wine is then aged on fine lees, without racking, for ten to twenty months in carefully selected oak barrels. Malolactic fermentation is deliberately delayed until the following spring. The final steps, up to bottling, follow the lunar calendar.
