Description
A rich and structured Santorini white wine
The estate
Born of fire and sea, a mysterious island stands out off the coast of Greece: the legendary island of Santorini. It is in the heart of this beautiful setting that Domaine Sigalas lives on, under the watchful eye of its creator Paris Sigalas. This emblematic winemaker has been carrying forward the history inherited from his ancestors since 1991. Nicknamed the "mathematician," this true pioneer decided very early on to combine innovation and tradition by reinventing his approach to viticulture and oenology, propelling the famous 40-hectare estate to be one of the most important in Greece.
The vineyard
Rocked by powerful volcanic eruptions 3,700 years ago, the sublime terroir of Santorini almost disappeared forever. Fortunately, the outcome was quite different: like true architects, the island's winegrowers managed to build what would become one of the oldest vineyards in the world: its volcanic soil, its nest-shaped vines and the unique climate of the Oia plain shaped this exceptional terroir.
Winemaking and ageing
Following hand-picking, the grapes are meticulously sorted and then placed in stainless steel vats and French oak barrels to begin their alcoholic fermentation (including 10% new barrels and 90% 2- and 3-wine barrels) for 8 months. A light stirring of the lees is carried out during the first two months.
