Tasting

Colour
This wine reveals a clear ruby red hue, enhanced by subtle purple glints, with a moderate intensity typical of its grape variety.

Nose
Upon aeration, the bouquet reveals vibrant aromas of fresh red berries such as sour cherry and raspberry. It is then enriched with delicate floral notes of peony and violet, underscored by touches of sweet spice, undergrowth and a fine graphite-like minerality.

Palate
The palate offers a fluid, highly elegant texture, supported by silky and particularly fine tannins. Medium-bodied, this wine unfolds pure flavours of morello cherry and wild berries, complemented by hints of liquorice. The finish, carried by a lovely mineral tension, proves long, crystalline and easy-drinking.

Food and wine pairing

This cuvée pairs wonderfully with roast poultry, a fine charcuterie platter or semi-hard cheeses such as Comté. It also pairs beautifully with mushroom-based dishes, such as a risotto, or delicate red meats like a herb-crusted leg of lamb.

Service and storage

Already very approachable and appealing in its youth, this Bourgogne 2023 can evolve favourably in the cellar for 3 to 5 years, with an ageing potential of up to a decade under good storage conditions.

The natural elegance and purity of a red Burgundy wine

The estate

Founded in 1999 in Marsannay-la-Côte, Domaine Sylvain Pataille is an essential reference in Burgundy. Starting from scratch with just one leased hectare, Sylvain Pataille, the current owner, now runs a vineyard of 15 to 18 hectares with the help of his brother Laurent. A pioneering and passionate winemaker, he achieved organic certification as early as 2008 and applies biodynamic principles. The estate stands out for its very low yields, its minimal-intervention approach and its deep commitment to showcasing local terroirs.

The vineyard

Located north of the Côte de Nuits, this Burgundy terroir benefits from a temperate continental climate. The vines thrive on gentle slopes between 250 and 320 metres above sea level, on clay-limestone marls and alluvial sediments resting on a Jurassic bedrock. The vineyard is managed in a highly manual way, including horse ploughing to preserve soil vitality, and aims for deliberately very low yields to ensure optimal grape quality.

The vintage

The year 2023 was marked by a particularly warm end of season. This sudden heatwave allowed for rapid concentration and optimal berry ripeness in record time, leading to a natural rise in alcohol levels. These unique climatic conditions shaped grapes with a more moderate acidity, offering a generous and elegant profile.

Winemaking and aging

True to the estate's philosophy, the winemaking of the Bourgogne 2023 involves minimal intervention. After slow, gentle pressing, fermentation starts spontaneously thanks to native yeasts, with an adjusted proportion of whole bunches. Ageing takes place over approximately twelve months, beginning in tanks before moving to French oak barrels with a very low proportion of new wood. The wine is finally bottled without filtration or artificial clarification.
