Appearance
The wine shows a lovely, medium-intensity cherry-red colour that is both clear and brilliant.
Nose
The nose opens with a complex bouquet of black and red fruit aromas, such as cherry and wild berries. It then evolves towards notes of espresso, smoked bacon, spices and undergrowth, all underpinned by a lovely fresh minerality.
Palate
Powerful and muscular, the palate offers great density and remarkable tension thanks to fine acidity. The almost velvety texture envelops abundant yet fine tannins. The finish is incredibly long and persistent.
Food and wine pairings
This wine pairs beautifully with casserole-roasted Charolais rib of beef, leg of venison with pumpkin braised in wild thyme, or washed-rind cheeses such as Époisses or Maroilles.
Serving and cellaring
Blessed with exceptional ageing potential, this Chambertin Grand Cru 2005 can be cellared and enjoyed until around 2055.
The power and complexity of a great Burgundy wine
The estate
Formally established around 1870 in Gevrey-Chambertin, an iconic area of Burgundy (France), Domaine Trapet Père et Fils is an 18.5-hectare family estate. Today, the property is run by Jean-Louis Trapet and his wife Andrée, now supported by their sons Pierre and Louis. A pioneer in its region, the estate stands out for its deep and early commitment to biodynamics, having obtained certification as early as the late 1990s. The house is renowned for crafting precise, environmentally respectful wines that remain true to their terroirs.
The vineyard
The vines that produce this Chambertin are ideally located at the heart of the climat, stretching from the bottom to the top of the slope. This vertical layout gives them access to a wide diversity of soils, from deep earth to stonier substrates. Farmed biodynamically without any herbicides, these old vines are the subject of innovative experiments in trellising and vine braiding designed to promote their natural balance.
The vintage
2005 is described as a vintage of peace, strength and harmony. After a cold February that delayed pruning, budburst took place at the end of April. Flowering then proceeded under excellent conditions until early June. The summer was particularly hot and dry, conditions that the vines withstood perfectly. Harvesting began on 18 September in mild weather, yielding healthy berries with optimal phenolic ripeness.
Winemaking and ageing
For this Chambertin Grand Cru 2005, around 40% whole bunches are included in the vinification to add extra complexity. The process begins with a cold pre-fermentation maceration. The wine is then carefully aged in oak barrels, with a proportion of new oak meticulously adjusted to integrate seamlessly with its great concentration.
