Bottled on 16 July 2024. Almost no nose. Strait-laced, modest, so self-effacing it feels as if it’s held within itself. Very slight lime-pith bitterness. Overall, though, a gentle wine, gentle finish. (TC)

Colour
The colour displays a pale, bright golden hue, enhanced by delicate green highlights.

Nose
The bouquet reveals itself fresh and complex, first unveiling subtle scents of white flowers such as linden blossom, paired with lively citrus notes of lemon and pink grapefruit. With aeration, deep mineral and iodine nuances emerge, recalling flint and shellfish.

Palate
The attack is energetic, leading into a full and generous palate. A lovely tangy backbone supports a complex, saline minerality, blending perfectly with the flavours of ripe white fruits such as peach, crisp pear and quince. The finish is long, persistent, and subtly marked by fine chalky notes.

Food and wine pairing

This wine pairs ideally with seafood, particularly oysters, whose iodine notes resonate with the minerality of the cru. It also beautifully accompanies delicate fish dishes (monkfish, sole, turbot) prepared with a light sauce, scallops, as well as delicate white meats such as poultry or veal sweetbreads in a cream sauce.

Service and storage

This Chablis 1er Cru "Mont de Milieu" 2023 offers lovely accessibility in its youth, yet possesses the structure to evolve favourably until around 2033. It is recommended to serve it at a temperature between 10 and 13°C.

The estate

Founded in 1880 in Beaune, Maison Joseph Drouhin expanded into Burgundy until acquiring northern lands in the 1960s, thereby creating Domaine Drouhin Vaudon. Now led by Frédéric Drouhin, the family estate oversees a global vineyard of around 100 hectares. A pioneer in its region, the estate stands out for its early commitment to the environment, becoming the largest entity in its appellation to be fully converted to biodynamics. The house's philosophy aims to reveal the authentic expression of each terroir through deliberately controlled yields.

The vineyard

Located in the Yonne, the estate's vineyard spans 38 hectares at the heart of the Chablis appellation. The Mont de Milieu climat benefits from a privileged geographical position with a full south to southeast exposure, protecting it from cold winds and ensuring optimal sunshine. This uniform terroir rests on Kimmeridgian soil, made up of limestone rich in tiny marine fossils dating back to the Jurassic period. All the vines are cultivated according to organic and biodynamic principles, with a strict commitment to limiting yields in order to concentrate the aromas of the grapes.

The vintage

The year 2023 began with a mild winter, leading to early budbreak in April. May brought excellent weather conditions, favouring rapid growth and a fine flowering. While July proved unstable with a few localised hail episodes, the end of summer was marked by intense heat and prolonged sunshine. These ideal conditions resulted in a generous harvest and grapes in perfect health at picking, which began in early September.

Winemaking and aging

The grapes destined for the Chablis 1er Cru "Mont de Milieu" 2023 are hand-harvested in perforated crates and then rigorously sorted. Gentle pneumatic pressing is used to retain only the finest juice, followed by a light cold settling. Fermentation takes place exclusively in temperature-controlled stainless steel tanks, kept between 16 and 20°C to preserve aromatic freshness. Finally, aging continues in stainless steel tanks for 7 to 8 months, with no contact with wood, in order to maintain the mineral purity of the cru.
