Tasting Notes
Nose
The aromatic bouquet reveals intense notes of kirsch and blackberries, intertwined with delicate hints of spring flowers and pepper. A subtle mineral touch, evoking slightly smoky nuances, rounds off this complex ensemble.
Palate
Medium- to full-bodied, this wine offers a harmonious, silky texture. Perfectly integrated acidity lends it lovely freshness, while ultra-fine tannins provide elegant structure on the palate. The tasting concludes with a long, intense and flavourful finish.
Food and Wine Pairings
This red wine pairs beautifully with noble meats such as game, roasted or braised meats, as well as full-flavoured poultry like guinea fowl or duck. It will also shine alongside mushroom-based dishes, such as porcini or morels, and roasted root vegetables.
Serving and Cellaring
To fully appreciate this 2023 vintage, it is recommended to serve it at a temperature between 16 and 18°C, ideally in large glasses. In its youth, decanting for two hours is advised to release all its aromas. Built for long-term cellaring, this wine can be laid down and enjoyed until around 2040.
The Elegance and Depth of a Châteauneuf-du-Pape Red Wine
The Estate
Officially founded in 1930 by Fernand Serre under the name Saint-Préfert, the estate distinguished itself as a pioneer of estate bottling. Located in France, in the Rhône Valley, the property was taken over in 2002 by Isabel Ferrando. Now leading the estate alongside her daughter Guillemette, she renamed the entity Famille Isabel Ferrando. The estate stands out for its biodynamic viticulture and its commitment to crafting wines that combine southern generosity with great finesse.
The Vineyard
The vineyard from which this wine originates is located in the Serres area, south of the Châteauneuf-du-Pape appellation. This high-quality terroir is built on a mosaic of soils composed of rolled pebbles and sand. The pebbles store daytime heat and release it at night, encouraging optimal ripening, while the sand lends great aromatic delicacy. All the vines are cultivated according to the principles of organic farming and biodynamics, certified since 2013, with grapes harvested entirely by hand.
Winemaking and Ageing
The winemaking process focuses on preserving the purity of the fruit and the expression of the terroir. Fermentation takes place in concrete vats, providing ideal thermal inertia. Ageing is then carried out in a blend of neutral vessels, including old oak barrels, with no use of new wood whatsoever. This method allows for a gentle, respectful integration of the wine's various components.
Grape Varieties
This wine is crafted from a blend predominantly composed of Grenache, complemented by significant proportions of Mourvèdre and Cinsault, along with a touch of Syrah.
