Tasting
Nose
The aromatic bouquet opens with delicate floral notes reminiscent of acacia and chamomile. At its heart, subtle hints of liquorice enrich this olfactory palette.
Palate
Combining richness and minerality, the palate stands out for its beautiful tension, which broadens upon aeration. The balanced structure reveals liquorice and saline nuances, offering a mouthfeel that is both ample and precise.
Food and wine pairings
This white wine pairs wonderfully with noble fish such as turbot or sole in beurre blanc sauce, as well as with shellfish like lobster. It also enhances roasted poultry, mushroom risottos, or cooked pressed cheeses such as Comté.
Serving and cellaring
To reveal all the complexity of this 2025 vintage, it is advisable to serve it at a temperature between 11 and 13°C. Decanting for half an hour to an hour before tasting is recommended. With its beautiful structure, this wine is perfectly suited to extended cellaring.
The richness and mineral tension of a Puligny-Montrachet Premier Cru
The estate
Founded in 1859 by the cooper Jean-Edouard Dupard, the Jean Chartron estate is a historic figure of Burgundy. Located in the heart of the village of Puligny-Montrachet, the property extends over 14.5 hectares of vines. Today, the fifth generation, embodied by Jean-Michel and Anne-Laure Chartron, watches over this heritage. Renowned for its exacting standards and discretion, the family perpetuates traditional expertise while committing to environmentally respectful viticulture, perfectly illustrating the identity of the wines of the Côte de Beaune.
The vineyard
The Clos du Cailleret terroir is an exclusive monopole of the estate, situated on the hillsides of the Puligny-Montrachet appellation. The vines thrive on clay-limestone soils that give the wine its distinctive mineral signature. The vineyard is managed according to the principles of organic farming, without certification, with rigorous soil work and entirely manual harvesting to preserve the quality of the berries.
Winemaking and aging
For this wine, fermentation takes place entirely in oak barrels, of which 30% are new. The wine then benefits from extended aging on fine lees for twelve months, enhancing its aromatic complexity. Finally, a refining period in tank of about four months perfects the balance of the cuvée before bottling.
