Description
A fresh and expressive Chablis wine
The estate
Established in 1955 in Milly in Burgundy, Domaine Jean Dauvissat Père et Fils covers 22 hectares spread across 53 plots in seven communes of the Chablis region. Fabien Dauvissat, grandson of the founder, now runs the estate with his father Philippe, representing the fourth generation. Since 2009, Fabien has converted the estate to organic farming. This mosaic of terroirs on both banks of the Serein River allows for the production of wines expressing the typical minerality of Burgundy's Kimmeridgian limestone.
The vineyard
This Chablis 1er cru "Côte de Léchet" comes from 4 plots with a south-east exposure on the heights of the village of Milly. With a total surface area of 2 hectares, this Burgundy vineyard is 35 years old on average.
The vintage
The year 2023 in Chablis began with a mild winter followed by a spring whose frosts had little impact on the estate. From April to June, instability caused increased vigilance in the vineyards. Despite the summer drought, the berries were healthy and of high quality.
Winemaking and aging
Long and gentle pressing followed by static settling for 12 to 24 hours. Fermentation using indigenous yeasts. Malolactic fermentation before aging. Bottled 22 months after harvest.
