Tasting

Colour
This white wine from France displays a pale yellow colour enhanced by delicate silvery highlights.

Nose
The aromatic bouquet opens with subtle floral notes of acacia, fresh almond and vibrant citrus. It then evolves towards indulgent aromas of candied orange and ripe yellow fruit, rounded off with a touch of iodine, toasted hazelnut and sweet spices.

Palate
The palate opens tender, full-bodied and enveloping. It is quickly energised by a lovely mineral and saline tension that brings great freshness. The whole offers a perfect balance between fruity generosity and precision, with a smooth texture and a lingering finish.

Food and Wine Pairing

This wine pairs wonderfully with white fish, smoked salmon, lobster salad or a mushroom risotto. It will also beautifully complement seafood such as mussels marinière and scallops, as well as hard cheeses or an Époisses.

Service and Storage

For optimal enjoyment, this Chablis 1er Cru "Fourchaume" 2023 is best served at a temperature between 11°C and 12°C. Approachable now, this wine can be cellared and enjoyed until around 2029.

The Perfect Balance Between Fruity Generosity and Mineral Tension in a Great Chablis

The Estate

Founded in 1973 by Jean-Marc Brocard in Préhy, the eponymous estate has established itself as a key reference in Burgundy. Now run by his son, Julien Brocard, the estate spans 240 hectares and is the largest producer of certified organic wines in the region. Guided by the motto "Primum non nocere", the Jean-Marc Brocard estate combines respect for tradition with sustainable innovations, such as biodynamics and agroforestry, to authentically express the pure character of the Chablis terroirs.

The Vineyard

This Chablis is produced from the prestigious Fourchaume climat, a 130-hectare terroir located on the right bank of the Serein. The vines, with an average age of 40 years, benefit from an excellent west and south-west exposure that favours early ripening. They thrive on deep, well-drained soils composed of brown clay and the famous Kimmeridgian limestone, rich in tiny fossilised oysters. This alluvial richness gives the grapes a unique generosity.

The Vintage

The 2023 vintage stands out for its particularly warm and generous weather conditions. Following a winter marked by low rainfall, the summer season saw high temperatures that favoured early and optimal ripening of the berries. Harvest therefore began early, from 8 September, during the coolest hours of the morning, allowing grapes to be picked with perfect phenolic ripeness and excellent sugar concentration.

Winemaking and Ageing

The making of this Chablis 1er Cru "Fourchaume" 2023 follows a philosophy of minimal intervention. Transfers are carried out by gravity to preserve the berries. Alcoholic fermentation is carried out using indigenous yeasts at controlled temperatures (18 to 20°C), followed by a complete malolactic fermentation. Ageing on the lees lasts 14 months, with 70% in large wooden foudres to bring subtle complexity, and 30% in stainless steel tanks to preserve aromatic purity.
