The Vineyard
Brut Atmosphères is a sparkling wine from a vineyard planted on varied soils of gravel, clay and sand, which bring finesse and minerality to the wine. The vines include young plants under 10 years old as well as older vines aged 30 to 40 years.
Vinification and Ageing
The grapes are harvested by hand, followed by direct pneumatic pressing of whole bunches without settling. Alcoholic fermentation, lasting 2 to 3 weeks, is carried out with indigenous yeasts. After an initial four-month ageing on the lees, the wine is bottled for the secondary fermentation using the traditional method. It then undergoes a second period of ageing "sur lattes" in bottle for 12 to 24 months before disgorgement, with a light dosage of liqueur d'expédition (0.1 cl).
Blend
Folle Blanche (36%)
Pinot Noir (33%)
