Tasting
Appearance
This wine reveals a deep and intense colour, typical of the structured wines of this appellation.
Nose
The aromatic bouquet opens with intense notes of black fruits, particularly reminiscent of ripe Bing cherry, underpinned by subtle earthy touches characteristic of its terroir.
Palate
Robust and endowed with a solid framework, the palate reveals well-defined tannins. A lively acidity balances the whole, bringing freshness and extending the tasting into a finish of beautiful length.
Food and wine pairings
Thanks to its assertive structure, this red wine pairs ideally with Burgundian gastronomy and dishes with character. It will elevate a bœuf bourguignon, roasted or braised red meats, as well as game preparations such as hare stew or dishes rich in mushrooms.
Serving and cellaring
To fully appreciate this wine, it is recommended to serve it at a temperature between 16 and 18°C, ideally decanting it in its youth. Endowed with excellent ageing potential, it can be kept in the cellar to be enjoyed until around 2038.
The power and depth of a Fixin Premier Cru
The estate
Founded in 1859 in Beaune by Louis Henry Denis Jadot, Maison Louis Jadot is a key figure in Burgundy. Both a négociant house and an estate at the head of a vast vineyard, it enjoys international renown. Now owned by the American Kopf family, the structure is led by Thomas Seiter, who carries on the legacy of the Gagey family. Committed to a strong environmental approach, the estate showcases the authentic expression of its terroirs through wines that combine tradition with respect for nature.
The vineyard
The "Clos du Chapitre" climat is a plot bounded by walls, recognised as a Premier Cru within the Fixin appellation, in the north of the Côte de Nuits. Resting on limestone, marl and stony soils, this terroir benefits from environmentally respectful viticulture. The estate applies the principles of organic farming, with certification expected in 2024, and has held the Level 3 High Environmental Value label since 2019.
The vintage
The 2023 vintage was marked by overall warm climatic conditions. Despite these rising temperatures, rigorous vineyard management made it possible to harvest healthy berries, delivering a remarkable balance between fine fruit ripeness and preserved acidity.
Vinification and ageing
True to a philosophy of minimal intervention, the vinification aims to let the natural power of the terroir express itself. After maceration and fermentation in vats, the wine benefits from measured ageing in oak barrels. This stage is carefully calibrated to support the tannic structure without masking the brightness of the fruit.
