The estate
Founded in 1897 by Nino Negri in Chiuro, in Valtellina, this Lombard winery is now the region’s largest cellar. Owned by Gruppo Italiano Vini since 1986, it farms 38 hectares of terraced vineyards on alpine slopes with granite and limestone soils. Under the guidance of oenologist Danilo Drocco, Nino Negri continues to uphold the excellence of Valtellina Nebbiolo, notably through its iconic Sforzato made using the traditional appassimento method.
The vineyard
The 5 Stelle Sfursat comes from the Sforzato di Valtellina DOCG appellation, an exceptional area where Nebbiolo thrives on steep alpine terraces. The grapes come from vineyards planted on granite and limestone slopes, benefiting from optimal exposure that allows Nebbiolo to ripen ideally.
Winemaking and aging
The 5 Stelle Sfursat 2022 is produced only in the most favorable years. The grapes are hand-harvested and laid in a single layer in 4 kg crates. They then undergo natural drying in a loft for around three months before winemaking, following the traditional appassimento method. This process allows the berries to lose nearly 30% of their weight, thereby concentrating aromas and natural sugars.
