Tasting notes

Appearance
This wine reveals a beautiful pale yellow robe, both bright and clear, adorned with subtle golden highlights.

Nose
Particularly aromatic, the bouquet expresses seductive notes of citrus, fresh menthol and spices. It is further enriched with aromas of ripe fruits, dried fruits and a subtle mineral touch reminiscent of gunflint.

Palate
At once powerful, refined and rounded, the attack is ample and harmonious. The texture is supported by a delicate saline acidity that carries the wine towards a very long finish, marked by savoury notes of ripe, slightly honeyed fruits.

Food and wine pairings
This cuvée will pair beautifully with fine fish in sauce, creamy white meats or a selection of mature cheeses.

Serving and cellaring
To fully appreciate the Chablis 1er Cru "Fourchaume" 2024, it is recommended to serve it at a temperature between 10 and 12°C. Endowed with fine ageing potential, this wine can be enjoyed until around 2032.

The estate
Founded in 1840 in the heart of Chablis, in Burgundy, the Simonnet-Febvre House stands out for its dual historical expertise in producing both still and sparkling wines. Acquired in 2003 by the renowned Beaune-based house Louis Latour, its current owner, the estate has modernised its facilities while preserving its identity. This well-known brand crafts cuvées that express the purity of the fruit and the precision of the Yonne terroirs. Combining tradition and innovation, the estate is also committed to more environmentally friendly practices to enhance its great wines.

The vineyard
This Chablis wine comes from the prestigious Fourchaume climat, ideally located on the right bank of the Serein, in direct continuation of the Grands Crus. The vines, on average 40 years old, benefit from a beautiful west and south-west exposure. They thrive on a typical terroir composed of Kimmeridgian clay-limestone soils, rich in small fossilised oysters, which give the wine its characteristic minerality. Yields from these plots are strictly controlled at 58 hl/ha.

Winemaking and ageing
To craft the Chablis 1er Cru "Fourchaume" 2024, the berries undergo careful vinification in stainless steel tanks, with temperature-controlled fermentation maintained between 18°C and 21°C to preserve aromatic freshness. The wine then benefits from 10 to 12 months of ageing on fine lees. This stage takes place 75% in stainless steel tanks and 25% in oak barrels, thus bringing complexity and roundness to the final cuvée.

Grape variety
This cuvée is crafted exclusively from Chardonnay.
