Tasting notes
Appearance
A deep, rich amber hue, a visual testament to nearly two decades spent in contact with American oak. The absence of cold filtration lends it an authentic clarity, adorned with a very subtle and alluring opalescence in daylight.
Nose
A warm invitation that opens on primary notes of toasted oak, vanilla and caramel. With time in the glass, the bouquet reveals a beautiful fruity complexity dominated by dried apricot and grape, before unfolding on delicate spices such as cinnamon, nutmeg and clove, subtly wrapped in a touch of chocolate.
Palate
The attack is rich, offering an oily, almost syrupy texture that coats the palate with moderate sweetness and a comforting warmth. The mid-palate is marked by toasted wood and a hint of caramel, enhanced by the elegant bitterness of dark chocolate and the indulgence of dried cherry. The progression then reveals a spicy warmth of mild white pepper and a touch of walnut. The finish, of medium persistence, lingers on woody notes, a slight structuring astringency and indulgent memories of vanilla.
Pairings and tasting moments
This meditation spirit shines particularly when enjoyed on its own to celebrate a special occasion. At the table, it pairs wonderfully with high-cocoa-content dark chocolates, whose bitterness it enhances. It also brilliantly accompanies desserts made with dried fruits (raisin cakes, date confections), as well as semi-firm cheeses such as Gouda or Havarti, ideally accompanied by toasted walnuts or almonds.
Mixology
Although this exceptional product is more than sufficient on its own, neat or over a single ice cube, it can be incorporated into premium "spirit forward" cocktails. It will elevate an aged Daiquiri (with fresh lemon juice and a mineral sugar syrup) or reinvent a Sazerac by replacing the rye whiskey, thus allowing the full complexity of the rum to express itself.

Ron Dos Mares Vintage 2005: An exceptional amber rum in limited edition
The Vintage 2005 is an amber rum of exceptional rarity, distilled in 2005 from sugar cane molasses in traditional column stills. This Panama rum benefited from extended tropical ageing of nineteen years in Panama, in carefully selected American bourbon casks. The production method stands out through a controlled manual replenishment process: every two years, the casks are topped up with a spirit of the same age or older, ensuring remarkable aromatic consistency, much like the solera system.
The bottling of this vintage, carried out in 2024, was overseen by Rogelio Castillo, age and quality assurance manager. Notably, this spirit is bottled without cold filtration in order to preserve the full integrity of its natural compounds. It is a strictly limited edition, comprising only 3,392 hand-numbered bottles worldwide. This drastic limitation, combined with its lengthy ageing, gives the Vintage 2005 immense collector value, highly sought after by premium spirits enthusiasts in search of authenticity and traceability.
