Tasting
Appearance
This wine reveals a white-hued robe.
Nose
Remarkably fresh, the aromatic bouquet opens on notes of citrus and delicate touches of white flowers. It then unveils a pronounced mineral dimension, evoking gunflint and flint, all subtly underlined by a very discreet oak character.
Palate
Airy and wonderfully refined, the palate seduces with its tension and perfectly integrated acidity. It offers a slender texture that carries an assertive minerality, stretching elegantly towards a long, complex and mouth-watering finish.
Food and wine pairings
This cuvée pairs wonderfully with seafood, shellfish or grilled fish such as a fillet of pike-perch. It will also brilliantly accompany delicate white meats as well as goat cheeses.
Serving and cellaring
To fully appreciate this Saint-Aubin 1er Cru "Murgers des Dents de Chien" 2024, it is recommended to serve it at a temperature of around 12 °C. Crafted for ageing, this great white wine has excellent cellaring potential and will deserve to rest a few years in the cellar to unveil all its complexity.

The estate
The history of the Vincent Girardin House began in 1980 when Vincent, then nineteen years old, started cultivating two hectares of family vines in Santenay, in Burgundy. Quickly recognised for the quality of its cuvées, the estate developed by combining its own domain with rigorously selected grape purchases on the Côte de Beaune. Sold in 2012 to the Compagnie des Vins d'Autrefois, now chaired by Jean-Pierre Nié, the House perpetuates its "Très Haute Couture" approach. Winemaker Éric Germain maintains a philosophy of minimal intervention to express the purity of the terroirs.
The vineyard
The Saint-Aubin 1er Cru "Murgers des Dents de Chien" climat enjoys an exceptional location in the south of the Côte de Beaune, overlooking the Chevalier-Montrachet Grand Cru. South-facing on a steep slope, the vines aged between 40 and 45 years thrive on shallow, very stony limestone soils, whose surface stones evoke dog's teeth. The vineyard is managed according to sustainable practices, without herbicides or insecticides, with deep soil work, natural compost inputs and exclusively manual harvesting.
Winemaking and ageing
For this Saint-Aubin 1er Cru "Murgers des Dents de Chien" 2024, the hand-picked grapes undergo a rigorous double sorting. After slow pneumatic pressing and a light settling, alcoholic and malolactic fermentations start spontaneously thanks to indigenous yeasts. The wine is then racked into 500-litre French oak barrels, of which about 10 % are new. Ageing continues on fine lees for fifteen months, without any bâtonnage, in order to preserve the wine's tension. The final blending and bottling are carried out in accordance with the lunar calendar.
