Pale, bright yellow-green. Expressive aromas and flavors of green melon, lemon and pineapple. Densely packed and juicy, offering a tactile texture and noteworthy volume without coming across as heavy. A very fruity, silky style of Chablis with emerging smoke and talc notes on the mounting finish.

Tasting

Colour
A luminous pale straw-yellow hue, enhanced by delicate greenish glints, illuminates the glass.

Nose
The aromatic bouquet opens with mineral notes evoking gunflint and oyster shell. It then develops into invigorating citrus aromas of grapefruit and lemon, harmoniously blended with subtle floral touches and hints of crisp pear.

Palate
Wonderfully elegant, the palate reveals an ample texture with a silky feel. The intense chalky minerality is perfectly balanced by a typical citrus vivacity, leading to an exceptionally persistent finish.

Food and Wine Pairing

This grand cru pairs beautifully with a seafood platter, oysters or lobster. It will also enhance grilled fish, as well as poultry or white meats served with a light sauce.

Service and Storage

To reveal its full complexity, it is recommended to serve this wine at a temperature between 12 and 14°C. Built for aging, this 2011 vintage will reach its peak and can be enjoyed until around 2034.

The Authentic Expression of a Great Chablis Terroir by William Fèvre

The Estate

Founded in 1959, the William Fèvre estate is an essential reference in Burgundy. Coming from a long line of winegrowers, the founder elevated the estate to international renown through a philosophy centred on the pure expression of terroir and an early commitment to organic viticulture. Owning the largest mosaic of classified climats in the appellation, the estate stands out for its minimal-intervention winemaking. Since January 2024, Domaines Barons de Rothschild Lafite have been the current owners, continuing this family-oriented and environmentally respectful approach under the direction of Didier Séguier.

The Vineyard

This grand cru comes from the climat Bougros. This singular terroir enjoys an ideal exposure, with terraces facing south-west on the upper section and a hillside facing due south below. The vines grow on shallow, stony soils resting on the famous Kimmeridgian limestone subsoil. This unique configuration gives the grapes a sun-drenched maturity combined with refined power.

Winemaking and Aging

The grapes are hand-harvested into small crates to preserve the integrity of the berries. After rigorous sorting, brief pressing and careful settling, the winemaking follows a minimalist approach. Aging is carried out with very limited use of new oak barrels, a method employed by the estate to preserve all the freshness and mineral identity of the fruit.
