Decanter

Distinct shellfish notes. Plenty of volume, a fleshy sunny character on the palate, freshened by lingering salinity to finish. Top example of AP Chablis in 2022. From 40ha of vines, with three distinct plots, including one from a lovely vineyard to the east around Viviers, with vines planted in the 1960s, but all of the vines have plenty of age.

Tasting

Colour
This white wine from France reveals a pale gold hue with subtle greenish glints. Its clarity and brightness attest to a superb visual quality.

Nose
The aromatic bouquet opens with refreshing notes of green apple and citrus zest. It then reveals delicate touches of white flowers, underscored by a mineral imprint reminiscent of gunflint, typical of its terroir.

Palate
The attack is lively and fresh, giving way to a linear structure and a mineral texture. The palate reveals flavours of ripe lemon and green pear, accompanied by salinity and a chalky grip. Medium-bodied, this wine is elegant and lingers on a persistent finish with citrus accents.

Food and wine pairing

This cuvée pairs beautifully with seafood, particularly oysters, crab or lobster, whose salinity it enhances. It also pairs perfectly with white-fleshed fish, seafood terrines, as well as poultry served with light herb or citrus sauces. Vegetarian dishes, asparagus and fresh goat's cheese also make excellent choices.

Service and storage

This Chablis Village "Domaine" 2022 can be enjoyed in its youth for its freshness, but also possesses a fine structure allowing it to evolve in the cellar and be enjoyed until around 2038.

Other characteristics

This wine has a moderate alcohol content of between 12.5% and 13%. It is bottled with a technical cork to prevent premature oxidation and preserve its ageing potential.

The authentic, mineral expression of a great Chablis terroir

The estate

Although the family's winemaking history dates back to the seventeenth century, the William Fèvre estate was officially founded in 1959. Located in Burgundy, this prestigious estate spans nearly 78 hectares, making it the largest holder of Grand Cru-classified plots in the region. Led by Didier Séguier since 1998, the estate is renowned for its pioneering environmental approach. Since January 2024, it has been owned by Domaines Barons de Rothschild, who continue this pursuit of excellence and respect for the terroir.

The vineyard

The vines dedicated to this cuvée flourish across several villages within the Chablis appellation, such as Beines, Béru and Fyé. Subject to a cool continental climate, the vineyard rests on the famous Kimmeridgian soils, composed of clay, limestone and abundant marine oyster fossils. The estate is distinguished by its environmentally responsible practices, with a large proportion of its land cultivated according to organic farming principles.

The vintage

The year 2022 benefited from highly favourable weather conditions, offering an ideal growing season. This vintage stands out for a profile combining the fruity ripeness reminiscent of 2019 with the vibrant freshness characteristic of 2020, giving rise to beautifully balanced grapes.

Winemaking and ageing

For this Chablis Village "Domaine" 2022, the grapes are hand-harvested at optimal ripeness and then rigorously sorted. Fermentation takes place under temperature control in inert vats to preserve aromatic purity. Ageing lasts 13 to 14 months, incorporating measured use of used oak barrels around six years old, which lends subtle complexity without masking the identity of the terroir.
