Tasting

Nose
The bouquet is both intense and subtle, revealing scents of white flowers and honey, accompanied by toasted nuances. A mineral note completes this delicate aromatic palette.

Palate
The palate seduces with its fullness and refined character, offering beautiful tension. The finish is characterized by remarkable length.

Food and wine pairings

This Beaune Premier Cru pairs perfectly with noble fish and finely prepared shellfish. It also goes excellently with poultry and white meats, whether roasted or served with creamy sauces. The estate particularly recommends roasted John Dory with hazelnuts and chanterelles.

Service and storage

It is recommended to serve this wine at a temperature between 12 and 14°C. The Beaune Premier Cru "Clos des Mouches" Domaine du Pavillon 2023 can be enjoyed young or cellared until around 2030.

A Burgundy Chardonnay combining finesse and minerality

The estate

Founded in Monthélie in 1831 by Bernard Bichot, the House of Albert Bichot embodies nearly two centuries of excellence in Burgundy. Now under the management of Albéric Bichot, representing the sixth generation, it has developed a unique model with six estates stretching from Chablis to Beaujolais and covering a total of more than 100 hectares, including 13 hectares of Grand Crus. A pioneer in organic viticulture, Albert Bichot now offers the most extensive portfolio of organic wines among the Houses in Beaune.

The vineyard

The Clos des Mouches vineyard is located in the upper part of the Clos, on a slope at an altitude of about 300 meters, south of Beaune, overlooking Pommard. The vines, aged 35 to 40 years on average, thrive on a 0.75-hectare plot. They benefit from a south-southeast exposure and rest on calcareous marl soils that lend the wine its characteristic minerality.

Winemaking and aging

Harvesting is done manually with strict sorting of the grapes. Pressing is slow and at moderate pressure. Alcoholic fermentation takes place in oak barrels. The Beaune Premier Cru "Clos des Mouches" Domaine du Pavillon 2023 is then aged for 14 to 16 months on fine lees in oak barrels, using 30 to 35% new oak.
