Description

An aromatic and gourmet Burgundy Chardonnay by Albert Bichot

The estate

Although the history of the Bichot family dates back to 1214, the family only settled in Burgundy in 1350.

The trading house was created in Monthélie in 1831, under the impetus of Bernard Bichot, and grew rapidly during the 19th century, thus becoming the official supplier to the Royal Swedish Court. An independent, family-owned business, Albert Bichot is one of the fine names that has left its mark on the wine industry and the influence of Burgundy wines around the world. Since 1996, the family’s 6th generation has been running the company, harmoniously blending modernity with family tradition.

Today, the Albert Bichot family owns more than 100 hectares of vines that spread from the north to the south of Burgundy and are grouped under 6 prestigious estates: Domaine Long-Depaquit, located in Chablis, in the Yonne, Domaine du Clos-Frantin and Château Gris, both located in Nuits-Saint-Georges, Domaine du Pavillon, in Pommard. Dedicated to the production of Mercurey wines, Domaine Adélie was acquired by Albert Bichot in 2013. The estate is named after the first name of Albert Bichot's daughter, who was born in 2003, thus perpetuating the family legacy from one generation to another. The beautiful vineyard of Domaine de Rochegrès in the Moulin À Vent appellation joined the family business in 2014.

The vineyard

The des Preuses climat derives its name from the word "perreuse" (stone) given to the old Roman road. Linking Chablis to Maligny, this road ran at the foot of the current Preuses area.

Albert Bichot's 2016 Chablis Grand Cru "Les Preuses" Domaine Long-Depaquit comes from a 0.25-hectare parcel located on the fringe of the Moutonne climat. Increased to 8500 vines per hectare, the planting density favours competition between vines, leading to smaller, more concentrated grapes.

The vines in this Chablis Grand Cru vineyard are 10 years old on average and are planted on clay soils with many pebbles.

Vinification and ageing

The grapes are harvested by hand and vinified in oak barrels for 1 to 5 years. The wine is also aged in oak barrels for 10 months, followed by a final ageing period on fine lees in stainless steel tanks for 6 months.

The tasting

Nose

The nose is marked by intense floral notes, fresh foliage and gunflint.

Palate

Pure and taut, the palate is seduced by this wine’s beautiful length. Delicious floral aromas mingle with notes of hazelnut and dried fruit on the finish. In its youth, this wine develops tertiary aromas (undergrowth, mushrooms) combined with a beautiful minerality.

Food and wine pairing

Albert Bichot's 2016 Chablis Grand Cru "Les Preuses" Domaine Long-Depaquit will complement seafood, white fish dishes, white meats and strong cheeses.
