Characteristics and Tasting Tips for the Meursault Village Domaine du Pavillon 2024 by Albert Bichot
Tasting
Colour
The colour displays pale yellow to golden hues with brilliant highlights, in the tradition of the great barrel-aged Chardonnays of the Côte de Beaune.
Nose
The nose is complex, combining subtle toasty notes with elegant floral nuances, against a backdrop of white- and yellow-fleshed fruit.
Palate
The palate is full, rich and silky, carried by a pronounced freshness that provides tension and balance. The long, highly aromatic finish lingers with notes evoking brioche.
Food and Wine Pairings
The Meursault Village Dom. du Pavillon 2024 pairs harmoniously with finely prepared fish and seafood, as well as roasted or slow-cooked white meats and poultry.
Serving and Cellaring
The Meursault Village Dom. du Pavillon 2024 follows the usual ageing profile of this cuvée, which can be enjoyed young for its fruit or cellared for a few years, until around 2029.
A Meursault Village from Domaine du Pavillon Balancing Richness and Freshness
The Estate
Albert Bichot is a family-owned négociant house founded in 1831 in Monthélie, now based in Beaune, in Burgundy. Led since 1996 by Albéric Bichot, the sixth generation of the family, it brings together six estates owned by the house across the region from north to south, several of which are certified organic. The house combines its négociant activity with direct management of its vineyards, in a constant pursuit of fidelity to the terroirs and villages of origin.
The Vineyard
This Meursault Village comes from plots of Domaine du Pavillon, located in the heart of the Meursault appellation, in the Côte de Beaune. The soils, composed of white limestone marls mixed with clay, support vines approximately 35 to 40 years old. This terroir benefits from environmentally respectful management, in keeping with the estate's commitment to organic viticulture.
Winemaking and Ageing
The Meursault Village Dom. du Pavillon 2024 is vinified by hand with minimal intervention. It is aged for 14 to 16 months in oak barrels, of which 20 to 30% are new, on fine lees, in order to bring structure and complexity while preserving the expression of the terroir.
Grape Variety
This wine is made from Chardonnay.
