Tasting
Appearance
This champagne reveals a brilliant, golden-straw hue, enlivened by a fine, steady effervescence that bears witness to meticulous craftsmanship.
Nose
The nose is intense and generous, dominated by aromas of ripe white fruits such as apple and pear, lifted by delicate floral notes. Hints of brioche and pastry, the result of extended ageing, enrich the bouquet, while a touch of minerality, reminiscent of chalk or flint, brings freshness to the whole.
Palate
On the palate, the wine unfolds with a full, almost spherical texture, carried by a fine, well-integrated mousse. The body is vinous and rounded, with a gentle acidity that gives way to a sense of roundness, without forgoing an underlying mineral tension. The saline, slightly chalky finish extends the tasting with impressive length.
Food and Wine Pairing
This champagne will pair beautifully with roast white meats, such as free-range poultry, as well as fine fish served in a light sauce. It also matches very well with creamy dishes, such as a mushroom risotto, or with young, firm cooked-pressed cheeses.
Serving and Cellaring

A Côte des Bar Blanc de Noirs Shaped by the Largillier Monopole of the Coessens Estate
The Estate
Founded in 2006 by Jérôme Coessens in Ville-sur-Arce, in the Côte des Bar, Champagne Coessens was built around a singular vision: a single lieu-dit, Largillier, farmed as a monopole, and a single grape variety, Pinot Noir. Still run today by Jérôme Coessens himself, the estate, an independent grower-producer, cultivates approximately 6.5 hectares of vines and follows an approach close to Burgundian philosophy, favouring the direct expression of terroir over the traditional Champagne blend.
The Vineyard
Largillier Blanc de Noirs comes from the Largillier monopole, a 3.36-hectare lieu-dit planted exclusively with Pinot Noir, located on a slope with a south-easterly exposure that encourages steady ripening of the grapes. This Champagne soil, composed of clay and Kimmeridgian limestone, imparts a distinctly mineral identity. This cuvée comes more specifically from the most clay-rich sub-plots of the site, known as Fruit and Flower, renowned for offering a generous, fruit-driven expression of Pinot Noir.
Winemaking and Ageing
The grapes destined for Largillier Blanc de Noirs are pressed gently, preserving the purity of the juice. The wines undergo full malolactic fermentation, which softens the natural acidity of Pinot Noir, followed by extended ageing on the lees, encouraging the development of brioche and pastry aromas. A period of bottle ageing precedes disgorgement, contributing to the complexity and harmony of this cuvée.

This champagne is made from 100% Pinot Noir, the emblematic grape of the Côte des Bar and the cornerstone of the entire Coessens range.
